Slow Cooker Sweet Potato & Pork Stew

Who doesn’t love a slow cooker meal? You can throw everything into your slow cooker and head off to work for the day and come home to the most luxurious dinner. This slow cooker pork and sweet potato stew is a family favorite. Young kids and adults alike will appreciate the lightly spiced pork, creamy sweet potatoes and the most deliciously savory broth that ties everything together. If you have an extra 15 minutes to spare in the morning that's all it will take to get everything ready to throw into your crockpot! Seriously, this is that easy! Serve this with some homemade cornbread or beef tallow fried corn chips for a nourishing, filling and tasty meal.  

Slow Cooker Pork & Sweet Potato Stew

Serves: 6

Ingredients

  • 2 teaspoons paprika
  • 1 teaspoon chili powder
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • ¼ teaspoon ground cumin
  • ⅛ teaspoon ground cinnamon
  • 1 teaspoon unrefined salt
  • ½ teaspoon black pepper
  • 1 Tablespoon fresh lime juice
  • 1 ½– 2 pound pork shoulder roast
  • 1 large sweet potato, peeled and cut into ½ inch chunks
  • 1 (14 ounce jar) diced tomatoes with their juices
  • 2 cups chicken or pork bone broth
  • 1 cup cilantro, roughly chopped 

Preparation

  1. Mix the paprika, chili powder, garlic powder, onion powder, cumin, cinnamon, salt and pepper in a small bowl. Add the lime juice and stir. Place the pork in a 6 quart slow cooker and rub evenly with the spice mixture.
  2. Add the sweet potato cubes, tomatoes, and broth. Cook on low for 8 hours. After cooking, shred the pork with two forks and return to the pot. Stir in the cup of cilantro and season with additional salt and pepper if desired. Serve with a dollop of Greek yogurt and lime juice.
