oatmeal with asparagus and fried egg
Never underestimate the power of a good breakfast.
If you all read my last post you know what I'm talking about. Taylor and I lost ourselves for a few moments while we enjoyed the wonders of roasted grapefruit. The sweet and tangy treat had us totally starry eyed and blitzed out. However, as tasty as it was it was definitely not enough fuel to get us through a day of farming. Lesson learned! We got our asses kicked that day.
As a girl who does not like to make the same mistake twice I was determined to make us a more substantial breakfast this morning. There was no way I was going to let our day on the farm knock us to the ground once again.
This tasty little number definitely did the trick. It was so darn easy to whip up and we stayed full for hours. However, I'd be lying if I said we didn't get our asses kicked just a little bit, because the truth is we got a beat down today. Turns out just when we thought we had things under control the wind picked up, the row covers flew off our lettuce and kale plantings, and the devil arrived (aka, flea beetle) We have a long week ahead of us.
The good news is that we have this tasty little number to get us through thick and thin. Grab a cup of coffee and dig in my friends!

Ingredients
- 2 cooks cooked oatmeal
- 1 1/2 cups asparagus, trimmed and cut into 1 inch pieces
- 1/4 cup sun dried tomatoes
- 2 eggs, fried
- 2 TBS low sodium organic soy sauce
Preparation
- Cook oatmeal according to your brands specific directions.
- Meanwhile heat a large skillet over medium heat. Add a little oil or butter. Crack to eggs into the pan and fry until yoke is set.
- Steam your asparagus until tender, about 5 minutes
- Once oatmeal and asparagus are cooked combine between two bowls. Add sun dried tomatoes and soy sauce. Top each bowl with a fried egg and season to taste with salt and pepper. Enjoy!
Notes
Use this recipe as a guide and feel free to substitute your favorite vegetables in place of asparagus.
