smooth2 I promise I wont bombard you all with a million sweet potato recipes. However, we are so stinking excited that our sweet potato crop is producing so well that I feel like a proud mama who needs to share the sweet potato love with you all. metater2 Sweet potatoes bigger than my head? Yes, please! We got up at the crack of dawn to harvest a few crates of these guys to bring to market with us this afternoon. The morning was chilly but digging for sweet potatoes is a great way to warm up. metater3   metate Before we head to market I wanted to share this delicious smoothie with you all. I was going to wait to write a blog post until tomorrow but since we just gulped down another one of these guys I figured I might as well share the love right away. We have been enjoying this as a mid morning snack all week long. It tastes like sweet potato pie but is full of good for you ingredients. Grab a straw and drink up! smooth If you are feeling brave throw in a cup of spinach to up the nutrition in this powerful smoothie! I promise you can't taste it!

Maple-Cinnamon Sweet Potato Smoothie

Ingredients

  • 1 large banana
  • 1 cup cooked sweet potato puree (you can make this easily at home or buy it at the store)
  • 1 1/2 cup almond milk (or milk of choice)
  • 2 TBS almond butter
  • 2 TBS pure maple syrup
  • 1.5 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/2 tsp ground ginger
  • 1 TBS chia seeds
  • Ice cubes

Preparation

  1. Place all the ingredients into a high speed blender and whirl away until smooth.
