garlicky swiss chard and egg toast
Sometimes my favorite recipes really aren't recipes at all. This garlicky swiss chard toast is a good example of what I love to make for lunch when I am in a pinch for time. Honestly, if I could eat all of my meals on a piece of toast I would be a happy girl. This is my favorite lunch creation in between harvesting for markets and running around town doing our vegetable deliveries.
The highlight of this particular toast creation is the garlicky chard!
I don't normally blog about what I eat for lunch, but this recipe (or non recipe) is the perfect example of what I eat around noon almost every day. It never gets old!
Not only is it easy to whip up but it is loaded with protein. Chard, avocado, and eggs really go well together. Feel free to play around with different toppings. I sometimes add a tomato or onion. The highlight is the garlicky chard though! Dig in.Garlicky Swiss Chard and Egg Toast
