Farmstand Salsa
Break out your favorite tortilla chips and get ready for the best, freshest, straight from the garden salsa you will ever eat! This salsa was so good that my kids drank it from little cups (not lying!!) And we loved it so much with our favorite tortilla chips but also enjoyed it with our tacos and breakfast burritos. With simple ingredients and not a lot of fuss, you can have your favorite condiment on hand in a flash.

Farmstand Tomato Salsa
Ingredients
- 1/2 of a small red onion, chopped
- 1 garlic clove, chopped
- 1 pound fresh garden tomatoes ( a mix of heirloom, Roma and cherry tomatoes are great here!) roughly chopped
- 1 jalapeño pepper, seeded and chopped
- 1/4 cup fresh cilantro, chopped
- juice and zest of 1 lime
- 1/2 teaspoon unrefined salt
- fat pinch of sugar (maple sugar, coconut sugar or regular sugar all work fine)
Preparation

In a food processor, combine the onion and garlic. Pulse until roughly chopped.
- Add the tomatoes, jalapeño, cilantro, lime juice, zest, salt and sugar. Pulse until combined but still chunky.

Strain half of the salsa to remove excess liquid. Combine the chunky strained mixture with the remaining salsa. If you still prefer a chunkier texture, strain out more of the liquid to reach your desired consistency.
- Serve with your favorite chips and enjoy!
