Detox Rainbow Chard, Cabbage & Carrot Slaw

This is by far the best healthy coleslaw I've ever had! It's loaded with crunch and a tangy, sweet, and slightly spicy dressing. I love how nourishing and detoxifying this is too. Cabbage has some wonderful detoxifying properties and when paired with other highly nutritious foods like chard, carrots and garlic this makes for one heck of an awesomely healthy and delicious side dish! If you're craving something fresh to go alongside grilled chicken, fish, or steak this is the side dish for you! And if you just want a really healthy one bowl meal, you could add some chickpeas to this for a complete meal. I hope you all enjoy this slaw as much as we do. Detox Rainbow Chard, Cabbage & Carrot Slaw

Serves: 4-6 as a side

Ingredients

  • 2 Tablespoons olive oil
  • 1 Tablespoon pure maple syrup
  • 1 clove garlic, finely chopped
  • ½ teaspoon salt
  • 1/2 medium head of green cabbage, shredded (about 3 cups)
  • 1 small bunch of rainbow chard, stems finely chopped and greens very thinly sliced
  • 2 large carrots, grated
  • Toasted pumpkin seeds
  • Sprinkle of flaky sea salt

Preparation

  1. Prepare the dressing by whisking all the ingredients together until smooth. This works best with an immersion blender.
  2. In a large bowl toss all the veggies together. Drizzle with the dressing and top with the toasted seeds. Sprinkle with flakey sea salt and serve.
