curried chickpea and yogurt salad
Before I get to this delicious recipe I wanted to share some exciting news with you all.

I still can't get over the fact that my parents aren't the only one's reading this blog. You can imagine my shock when last December Self Magazine contacted me to see if I would create 6 farm fresh recipes for their September issue. After reading their initial email I jumped up and down, almost peed my pants, and then immediately thought to myself "how the heck did Self Magazine discover my blog?" I'm a small town girl, I spend my days in the dirt, my evenings cooking for my family, and somehow, through this tiny blog Self Magazine discovered what we were doing and they reached out. I'm so honored.
Naturally, I hope you all run to your nearest grocery store and pick up a copy of the September issue. I think you will be happy with the six recipes your favorite farmer created (I hope I'm your favorite farmer!)
If you don't have time to pick up a copy of Self Magazine tonight, don't worry I've got a delicious curried chickpea salad that will get you through until you have the time. This is my vegetarian version of a classic curried chicken salad. The chickpeas work wonderfully here. Pour some wine and enjoy the last few hours of the weekend.Curried Chickpea and Yogurt Salad
Ingredients
- 1 15 oz can organic chickpeas, drained and rinsed
- 1 slicing cucumber, cut into 1/4 inch pieces
- 1/2 small apple, chopped into 1/2 inch pieces
- 1/2 small red onion, diced
- 1/3 cup parsley, diced
- 1/3 cup raisins
- 1/3-1/2 cup plain organic greek style yogurt (maybe a bit more if too dry)
- 1 1/2 tsp curry powder (more if you like it spicy)
- salt and pepper to taste
- Optional: a little fresh lemon juice drizzled on top
Preparation
- In a large bowl combine all ingredients. Taste test and add anything you think is missing. Enjoy!

Use this recipe as a guide. Adjust measurements and ingredients as necessary.
