Apple, Fennel, Citrus Salad
Ingredients
- 1/3 cup extra virgin olive oil
- 3 tablespoons fresh orange juice
- 1 tablespoon apple cider vinegar
- 2 teaspoons maple syrup
- 1 teaspoon Dijon mustard
- Salt and pepper to taste
- 2 large or 3 medium fennel bulbs, very thinly shaved (mandoline recommended)
- 1 large apple, very thinly sliced (mandoline recommended)
- 1 cup pomegranate arils
- 1/4 cup toasted hazelnuts, chopped
- A few fennel fronds for serving
Preparation
- Make the dressing by combining all the vinaigrette ingredients in a small mason jar. Seal the lid and shake until well combined. Taste for seasonings and adjust as needed.
- Use a mandoline to thinly shave the fennel and apple. If you don't have a mandoline, use a sharp knife to slice them as thinly as possible.
- In a large bowl, toss together all the salad ingredients. Drizzle in the dressing and toss well. Let the salad sit for a few minutes before serving to allow the flavors to meld.
