A Really Good Tomato Salad
If you're swimming in tomatoes I've got just the recipe for you. This tomato salad is simple, versatile and so satisfying with all of those late summer tomatoes. It hits the spot on a hot summer day and goes well with just about anything you're serving. Grilled fish, meat, or simply eaten on its own with some crusty bread for dunking.
We've made this a couple of different times and one of my favorites was as an appetizer with grilled bread that I just spooned the tomato salad over. However, for simplicity, when you're making a "true" meal I think this tastes best served alongside a grilled steak or cod fillet.

A Really Good Tomato Salad
Ingredients
- 1/2 of a red onion, thinly sliced (about 1/2 cup worth)
- 1 pint cherry tomatoes, sliced
- 1 pound heirloom tomatoes, sliced into 1/2 inch thick pieces
- 1/4 cup thinly sliced basil leaves
- 2 Tablespoons balsamic vinegar
- 2 Tablespoons extra virgin olive oil
- 1/2 teaspoon fine sea salt
- 1/3 cup crumbled feta cheese
Preparation
- Add all the ingredients to a large bowl and toss well. Let sit for 10 minutes before serving to let all the flavors meld together.
